Southern style is the best way to BBQ, you get a good southern style rub and rub it in after you've cleaned the chicken. You need to really rub it in.
Of course you've already called your bud in the US and gotten either Snow's BBQ or The Salt Lick BBQ sauce. You take the rubbed chicken and slap it on the grill that's already Real Hot....some folks call it 75C but you can call it "damn near burned my eyebrows" hot, that's plenty.
Now you cook that puppy for 5 minutes on each side and then move it to the cooler side of the grill and start basting it with your BBQ sauce every 5 minutes for twenty minutes and don't be cheap about it. Now, you have to baste both sides unless you're planning to just eat the top half.
Utensils? They better be stainless and long because eyebrow burning hot will also cook the hair off your hands.
The only problem you're left with is beer and your sides and where you're going to nap afterward.
Since the FSA didn't talk about smoking the chicken I won't either, besides it's an art and gets real technical as to the wood, time and other such intricacies. Nuff said.....
We risk life and limb cooking outdoors. It's hard to remember how dangerous it is when burnt sausages taste so delicious, and the neighbours call around for share. Must try to do better and not endanger the lives of my family and friends.
The BBQ guidance reminds me of the winter weather "advice" that my college emails out with such treasures as wear a coat, walk like a penguin on the ice, don't stay outside too long, etc. How did the human race ever survive without such guidance?????? Big sigh

My advice is to avoid BBQ's. They're just for the macho amongst us to prove they can't cook!

But my dog (Glen of Imaal) prefers his burgers, steak, salmon and chicken too, prepared on the grill. As do I. Nothing macho about it.
